Ingredients
For the Chicken Marinade
- 500 grams (1 lb) chicken breast or thighs, boneless and cut into bite-sized pieces
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
For the Butter Chicken Sauce
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 cup tomato purée (or 3-4 fresh tomatoes, blended until smooth)
- 1/2 cup heavy cream (or fresh cream)
- 1 tablespoon ground cashews (optional for extra creaminess)
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon fenugreek leaves (kasuri methi), crushed
- Fresh cilantro leaves, chopped, for garnish

Step 1: Marinate the Chicken
- In a bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt.
- Add the chicken pieces and coat them well in the marinade.
- Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or overnight for best results).
Step 2: Cook the Chicken
- Heat a pan with a bit of oil over medium-high heat.
- Add the marinated chicken pieces and cook until they're browned on all sides and cooked through (about 5-7 minutes).
