Classic Chicken Stew Recipe
This hearty chicken stew is packed with tender vegetables and juicy chicken pieces, simmered in a flavorful broth. It’s a comforting meal, perfect for colder days!
Ingredients:
- 2 tbsp olive oil
- 1 lb (about 500g) chicken thighs or breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 large onion, diced
- 2 garlic cloves, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 4 cups (1 liter) chicken broth or stock
- 1 cup water
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 cup frozen peas
Instructions:
Brown the Chicken:
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
- Season the chicken pieces with salt and pepper, then add them to the pot.
- Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
Sauté Vegetables:
- In the same pot, add the remaining olive oil.
- Sauté the onions, garlic, carrots, and celery for 5 minutes or until softened.
Add Potatoes and Broth:
- Stir in the potatoes, chicken broth, water, thyme, rosemary, and bay leaf.
- Return the chicken to the pot and bring the mixture to a boil.
Simmer:
- Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Add Peas and Adjust Seasoning:
- Add the frozen peas and cook for another 5 minutes.
- Taste and adjust seasoning with more salt and pepper if needed.
Serve:
- Remove the bay leaf, ladle the stew into bowls, and garnish with fresh parsley.
