Ingredients:

  • 2 tbsp olive oil
  • 1 lb (about 500g) chicken thighs or breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 4 cups (1 liter) chicken broth or stock
  • 1 cup water
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 tbsp fresh parsley, chopped (for garnish)


Instructions:

  1. Brown the Chicken:

    • Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
    • Season the chicken pieces with salt and pepper, then add them to the pot.
    • Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

  2. Sauté Vegetables:

    • In the same pot, add the remaining olive oil.
    • Sauté the onions, garlic, carrots, and celery for 5 minutes or until softened.

  3. Add Potatoes and Broth:

    • Stir in the potatoes, chicken broth, water, thyme, rosemary, and bay leaf.
    • Return the chicken to the pot and bring the mixture to a boil.

  4. Simmer:

    • Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

  5. Add Peas and Adjust Seasoning:

    • Add the frozen peas and cook for another 5 minutes.
    • Taste and adjust seasoning with more salt and pepper if needed.

  6. Serve:

    • Remove the bay leaf, ladle the stew into bowls, and garnish with fresh parsley.

  • For a thicker stew, mash a few of the potatoes or add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water).
