Stuffed Bhindi
This is a delicious and spicy variation where the Bhindi is stuffed with a masala mixture.
Ingredients:
- 250g Bhindi (okra)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tbsp gram flour (besan)
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp amchur (dry mango powder)
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Wash and dry the Bhindi. Cut off the ends and make a slit lengthwise in each Bhindi.
- In a bowl, mix gram flour, turmeric, coriander, cumin, amchur, garam masala, and salt.
- Stuff this spice mixture into the slit Bhindi.
- Heat oil in a pan, add cumin seeds, and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add the stuffed Bhindi and cook on low heat until the Bhindi is tender and the spices are well roasted.
- Garnish with fresh coriander leaves and serve hot.
