Mughlai Biryani is a culinary masterpiece that reflects the opulence and grandeur of the Mughal Empire. Known for its rich flavors and aromatic spices, this biryani is a dish fit for royalty. Originating in the royal kitchens of the Mughal emperors, it combines fragrant Basmati rice, tender marinated meat, and a generous use of ghee, saffron, and dried fruits.

The beauty of Mughlai Biryani lies in its layers of flavors and textures. The meat, often chicken or lamb, is marinated in a blend of yogurt and spices, then cooked to perfection. The rice is parboiled with whole spices like cinnamon, cardamom, and cloves, and then layered with the meat, fried onions, and a garnish of nuts and raisins. Mughlai Biryani Recipe

Ingredients:

  • 500g Basmati rice
  • 500g chicken or lamb
  • 1 cup yogurt
  • 2 large onions, thinly sliced
  • 2 tbsp ghee
  • 1/4 cup milk with a pinch of saffron
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1 tsp red chili powder
  • Whole spices: cinnamon, cardamom, cloves, bay leaf
  • 1/4 cup fried cashews and raisins
  • Salt to taste

Instructions:

  1. Marinate the Meat: Mix yogurt, ginger-garlic paste, garam masala, turmeric, and red chili powder with the meat. Let it marinate for at least 2 hours.

  2. Cook the Rice: Parboil the rice with whole spices (cinnamon, cardamom, cloves, bay leaf) and salt.

  3. Fry the Onions: Heat ghee in a pan and fry the onions until golden brown. Set aside half for garnishing.

  4. Cook the Meat: In the same pan, cook the marinated meat until tender.

  5. Layer the Biryani: In a heavy-bottomed pot, layer half the rice, followed by the cooked meat, fried onions, and nuts. Repeat the layering and pour the saffron milk on top.

  6. Dum Cooking: Seal the pot with a lid or dough and cook on low heat for 20-25 minutes.

  7. Serve: Fluff the biryani gently and serve hot with raita or salad.
