Mughlai Biryani: A Royal Feast
Mughlai Biryani is a culinary masterpiece that reflects the opulence and grandeur of the Mughal Empire. Known for its rich flavors and aromatic spices, this biryani is a dish fit for royalty. Originating in the royal kitchens of the Mughal emperors, it combines fragrant Basmati rice, tender marinated meat, and a generous use of ghee, saffron, and dried fruits.

Mughlai Biryani Recipe
Ingredients:
- 500g Basmati rice
- 500g chicken or lamb
- 1 cup yogurt
- 2 large onions, thinly sliced
- 2 tbsp ghee
- 1/4 cup milk with a pinch of saffron
- 1 tbsp ginger-garlic paste
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1 tsp red chili powder
- Whole spices: cinnamon, cardamom, cloves, bay leaf
- 1/4 cup fried cashews and raisins
- Salt to taste
Instructions:
Marinate the Meat: Mix yogurt, ginger-garlic paste, garam masala, turmeric, and red chili powder with the meat. Let it marinate for at least 2 hours.
Cook the Rice: Parboil the rice with whole spices (cinnamon, cardamom, cloves, bay leaf) and salt.
Fry the Onions: Heat ghee in a pan and fry the onions until golden brown. Set aside half for garnishing.
Cook the Meat: In the same pan, cook the marinated meat until tender.
Layer the Biryani: In a heavy-bottomed pot, layer half the rice, followed by the cooked meat, fried onions, and nuts. Repeat the layering and pour the saffron milk on top.
Dum Cooking: Seal the pot with a lid or dough and cook on low heat for 20-25 minutes.
Serve: Fluff the biryani gently and serve hot with raita or salad.
