Lucknowi (Awadhi) Biryani: A Taste of Royalty
Lucknowi Biryani, also known as Awadhi Biryani, is a regal dish that hails from the royal kitchens of the Awadh region in Uttar Pradesh, India. Unlike its more fiery cousins from the south, Lucknowi Biryani is known for its subtle flavors, delicate spices, and a distinct fragrance that sets it apart. Recipe for Lucknowi Biryani:
Ingredients:
- 500g Basmati rice
- 500g mutton or chicken
- 1 cup yogurt
- 2 large onions, thinly sliced
- 2 tbsp ginger-garlic paste
- 1 tsp saffron strands soaked in warm milk
- 1 tbsp garam masala
- 1 tsp cumin seeds
- 4 cloves
- 4 green cardamom
- 2 bay leaves
- 1 cinnamon stick
- 1/2 cup ghee
- Fresh coriander and mint leaves
- Salt to taste
Instructions:
- Marinate the meat with yogurt, ginger-garlic paste, and garam masala for 2 hours.
- Cook Basmati rice with cloves, cardamom, bay leaves, and cinnamon until 70% done.
- In a heavy-bottomed pot, heat ghee and sauté onions until golden brown. Remove half for garnishing.
- Add cumin seeds, marinated meat, and cook until the meat is tender.
- Layer the semi-cooked rice over the meat. Drizzle saffron milk and ghee over the rice.
- Cover the pot with a tight lid and cook on low heat (dum) for 20-25 minutes.
- Garnish with fried onions, coriander, and mint leaves before serving.
