Dahi Bhindi (Okra in Yogurt Sauce)
This is a creamy and tangy preparation of Bhindi in a yogurt-based gravy.
Ingredients:
- 250g Bhindi (okra)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 onion, finely chopped
- 1 tsp ginger-garlic paste
- 1 cup yogurt (curd)
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Wash and dry the Bhindi. Cut off the ends and slice into 1-inch pieces.
- Heat oil in a pan, add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add the Bhindi and cook until it is tender and slightly crispy.
- In a bowl, whisk yogurt with turmeric, coriander powder, red chili powder, and salt.
- Lower the heat and add the yogurt mixture to the Bhindi. Stir well and cook for a few minutes until the gravy thickens.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
