Aloo Handi (Potato Curry in a Handi)
This is a slow-cooked, spiced potato curry made in a clay pot or heavy-bottomed vessel.
Ingredients:
- Potatoes (cubed)
- Onions (chopped)
- Tomatoes (chopped)
- Green chilies
- Garlic-ginger paste
- Yogurt
- Garam masala
- Turmeric powder
- Red chili powder
- Coriander powder
- Cumin seeds
- Fresh coriander leaves
- Oil or ghee
- Salt
Method:
- Heat oil or ghee in the handi, add cumin seeds, and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add garlic-ginger paste and green chilies, sauté for another minute.
- Add tomatoes, and cook until soft.
- Add turmeric, red chili powder, coriander powder, and salt.
- Add the potatoes and stir well.
- Mix in yogurt, cover, and cook on low heat until the potatoes are tender.
- Sprinkle garam masala and garnish with coriander leaves.
- Serve with naan or rice.
