Aloo Handi (Potato Curry in a Handi)

This is a slow-cooked, spiced potato curry made in a clay pot or heavy-bottomed vessel.

Ingredients:

  • Potatoes (cubed)
  • Onions (chopped)
  • Tomatoes (chopped)
  • Green chilies
  • Garlic-ginger paste
  • Yogurt
  • Garam masala
  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • Cumin seeds
  • Fresh coriander leaves
  • Oil or ghee
  • Salt

Method:

  1. Heat oil or ghee in the handi, add cumin seeds, and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add garlic-ginger paste and green chilies, sauté for another minute.
  4. Add tomatoes, and cook until soft.
  5. Add turmeric, red chili powder, coriander powder, and salt.
  6. Add the potatoes and stir well.
  7. Mix in yogurt, cover, and cook on low heat until the potatoes are tender.
  8. Sprinkle garam masala and garnish with coriander leaves.
  9. Serve with naan or rice.
